Class Description

Description

This comprehensive and practical class is designed to be your ultimate resource and go-to guide for all of your seasoning and herb-related questions. We explore and cover all of the following essential topics in depth, and cook up a diverse variety of delicious dishes that incorporate these important culinary techniques and flavor-building methods:

  • Identifying and learning about every herb and spice available to you in the supermarket, including their origins, flavor profiles, and best uses
  • Understanding when to choose fresh herbs versus dried spices for different applications, cooking methods, and flavor profiles
  • Mastering food pairings and understanding which herbs and spices complement and enhance specific meats, vegetables, starches, and fruits
  • Understanding the medicinal properties of herbs and spices and their various health benefits and therapeutic uses
  • Learning where to source quality herbs and spices from reputable suppliers and specialty markets
  • How to properly store herbs and spices for maximum flavor longevity, freshness, and potency over extended periods

To highlight and reinforce these important teachings, we will carefully prepare a fragrant spiced rice pilaf, authentic Indian lentil dal with aromatic clarified butter, and fattoush, a traditional and beloved Middle Eastern chopped salad with spiced pita chips and fresh fragrant herbs. We will also make a Persian kookoo, a savory baked herb and egg dish that beautifully showcases the versatility and flavor-building power of fresh herbs in cooking.

Important notes:

  • Please reach out to CourseHorse if you have any dietary restrictions or allergies so we can accommodate your needs appropriately.
  • Make sure to ring the outside buzzer when you arrive, even if the front door is open, so we know you are arriving and can prepare appropriately for your arrival and welcome you to the class!
School Notes:

For NYC In-Person Classes:

You’ll receive a complete recipe packet and enjoy a full sit-down meal at the end of class with your classmates. Our classes are BYOB, and you are welcome to bring a bottle to enjoy at the sit-down meal (not including our baking or dessert classes).

Our classes are hands-on, coupled with demonstration-style teaching. Everyone is situated at their own cutting board/chef’s knife station around a large wooden work table that accommodates the whole class (10 people max). We work together as a group, with the chef at the head of the table.

We focus on knife skills, preparing ingredients for cooking, and we strive to find every opportunity to offer you a hands-on experience at the stove and at your station, all within the spatial parameters of a single stove/family-style kitchen. We ask for volunteers to assist in all cooking.

Refund Policy

For Public Classes:

We have a firm 3 business days cancellation policy (for credit only) to ensure that we have enough time to re-fill your seat with another student.

Please note: Boot Camps require 6 business days notice to be rescheduled.

While it is not in our nature to say no, we are simply not able to accommodate last-minute illnesses or work-related conflicts. However, you are always welcome to send someone in your place, because we understand that these things do happen. Classes are not refundable.

 For Culinary Boot Camps:

Because of the volume of Boot Camps we offer, we cannot offer make-up classes to anyone who misses a single class, no matter the reason, as it happens too often and we cannot handle that volume of make-ups.  Once you book your boot camp, make sure to mark (and prioritize) all the dates in your calendar.

Because we know how disappointing it is to miss a class, you are always welcome to send a friend in your place (just send us their name ahead of class), and perhaps insist that they cook you dinner as repayment.

In any event where a customer wants to cancel their enrollment and is eligible for a full refund, a 5% processing fee will be deducted from the refund amount.

 Thank you for understanding!

The class was, great, right on target. The chef/Instructor (Al)was patient, fun and very informative. He taught processes not just how to do things.

  • Seasoning 101: How to Use Herbs + Spices

Very basic , a little too slow pace I was hoping for more information on function of herbs/spices. And maybe the addition of some more exotic ones.

This was exactly the kind of course I've been looking for literally for years. I am already making one of the dishes and using the information to do what I've wanted to be able to do which is take the basic idea of a recipe but then change the spices around and make something new...granted, I'm literally doing that now so I don't know how it will come out, but I have confidence! If there's a second version of this class where we learn *even more* more things about spices and herbs I would love to go to that too. Great teacher, extremely responsive to everyone. Deliciousness. What more could you want?
