Master the preparation of authentic Indian lamb curry in this comprehensive culinary class exploring classic spiced dishes from India. Learn to create lamb vindaloo featuring bold spice profiles built from onion, ginger, garlic, and aromatic spice combinations that define Indian cuisine. This complete meal experience includes multiple dishes that showcase the complexity and depth of Indian cooking techniques and flavor development.
Complete Menu Overview:
The class begins with appetizer preparation. You will create onion fritters, simple and delicious fried onion balls served with chutney, showcasing how basic ingredients transform into satisfying appetizers.
The main course focuses on lamb vindaloo, a notably hot and spicy dish originating from the Goa region of West India. This popular restaurant dish adapts well to various proteins including chicken, lamb, and vegetables. Due to vindaloo's intense spice level, it is traditionally served with raita for temperature relief. You will learn to prepare both vindaloo and raita. Raita combines cucumbers with yogurt and spices, providing cooling refreshment through yogurt's mild, creamy qualities balanced against cucumber's refreshing taste.
The class also covers spicy tangy kadhai chicken, a dish that embodies multiple flavor dimensions. Chicken marinated in chili spice powder and additional spices offers a rollercoaster of flavor sensations, combining heat, spice, and complexity in each bite.
Carrot halwa, an Indian dessert pudding, provides a sweet conclusion to your meal, demonstrating how Indian cooking extends through complete courses from appetizers through dessert.
