Class Description

Description

This class is perfect for those with a passion for pork and charcuterie. The hands-on butchery workshop guides you through the complete breakdown of a whole hog, highlighting the different cutting methods used for fresh meat versus cuts and muscles reserved for charcuterie and salumi production.

You will explore time-honored meat preservation and charcuterie-making techniques, including:

  • Dry salting and brining methods
  • Traditional dry-curing processes
  • Fermentation techniques
  • Hot and cold smoking methods

During the workshop, you will participate hands-on in preparing various cured meat products, getting your hands involved in the curing process while learning professional techniques. The class concludes with an extensive tasting where you can sample and compare the different preservation methods explored during the session.

Please wear a warm sweater or jacket; the cutting room temperature is maintained at approximately 60 degrees Fahrenheit.

If you can not attend a class that you have purchased, please provide as much advanced notice as possible so we can try to fill vacant spots. Any cancellations prior to five days from the class will be issued a credit toward a future session. Any cancellations within five days of a class are non-refundable.

Wasn't as hands-on as I had imagined but it was fun handling body parts as they were hacked off.

Would have liked more hands-on butchery - informative but more of a demonstration rather than a butchery class.
