Embark on an authentic Italian culinary experience by learning to make fresh fettuccine pasta from its basic component ingredients. The class uses semolina flour derived from durum wheat, which imparts the characteristic golden color and firm, satisfying texture that Italians call al dente.
While your pasta dough undergoes its necessary resting period, the Chef Instructor demonstrates preparation of salsa rosa, a beautiful and creamy pink sauce that bridges the gap between tomato-based and cream-based Italian sauces. Often compared to the popular American vodka sauce, salsa rosa is rooted in authentic Italian tradition. Food historians debate its exact origins, proposing that it emerged as a method to soften the intensity of pure tomato sauces, creating a more versatile and comforting option that combines tomato's brightness with cream's richness. You will determine your own verdict upon tasting this classic preparation.
Participants choose their preferred method for rolling out the pasta dough: the traditional hand-rolling approach using a rolling pin, or the more efficient modern pasta machine. Once shaped into classic fettuccine strands and cooked in properly salted boiling water, you will sit down to savor the fresh pasta you have crafted.
