Class Description

Description

Chocolate is a subject taken seriously in professional kitchens, and this class treats it with the reverence it deserves. With a foundation of solid technique and high-quality ingredients, the results are extraordinary. You will learn to work with chocolate from the ground up, tasting and comparing different brands to understand how origin, percentage, and processing affect flavor, then putting that knowledge to work in a lineup of spectacular chocolate confections.

The menu for the class:

  • Molten Chocolate Cake
  • Chocolate Souffle
  • Double Chocolate Chunk Cookies
  • Chocolate Brandy Creme Brulee
  • Truffles

Each preparation highlights a different set of techniques, from the precise timing of a molten cake to the delicate structure of a soufflé, the buttery richness of a great cookie, the custard-making skills behind a brulee, and the art of tempering and rolling truffles by hand. This is a class for anyone who wants to understand chocolate more deeply and cook it more confidently.

School Notes:

We don't have any age restrictions on either our classes or events. We take people of all ages, but those under 21 years of age are not allowed to consume wine or any alcoholic beverages.

The instructor talks too much. It makes it seem like you will make all the items on the menu, but you actually only ending up making one - this makes $125 too much. Also the kitchen is really small. On a positive note, the recipes were good!

Great instructor! Although lack of individual work stations was disappointing.
