Class Description

Description

Master the essential art of using the most fundamental and important tool in any kitchen: the chef's knife. In this comprehensive and hands-on class, you'll learn everything you need to know about selecting the right knife for your specific cooking needs and style, properly storing your valuable kitchen tools to prevent damage, sharpening your blade professionally to maintain its sharp edge, holding the knife with correct ergonomic technique to prevent injury and fatigue, and using your chef's knife with growing confidence, skill, and precision. You'll practice extensively with an 8-inch professional-grade chef's knife, and you're warmly welcome to bring your own favorite knife if you prefer to work with a familiar tool. At the satisfying conclusion of the class, you'll take home a high-quality sharpening stone that you'll learn to use flawlessly throughout your cooking career and personal kitchen endeavors. To cap off the practical and rewarding experience, we'll prepare and share a delicious homemade meal together, such as savory minestrone soup bursting with fresh vegetables or colorful and fragrant vegetable stir-fry.

What You'll Learn:

  • Proper techniques for holding the knife correctly, sharpening your blade professionally, and effectively using a professional chef's knife in your daily cooking and meal preparation
  • Comprehensive knife care practices and strategies, including proper storage methods in your kitchen and maintenance techniques to extend your knife's productive life for years to come
  • Professional sharpening methods to use a sharpening stone correctly, safely, and consistently to keep your knife in excellent working condition throughout its long life
  • Essential basic chopping, dicing, and cutting skills, and exactly how to apply them efficiently and safely during meal preparation at home in your own kitchen

Supplies and Materials:

  • An 8-inch chef's knife will be provided for practice during the class, but you are very welcome and encouraged to bring your own favorite knife if you wish to use your own tool throughout the lesson.
  • A quality knife sharpening stone is included with the course materials and yours to keep, and you will learn to use it properly and effectively during the hands-on instruction portion of the class.

Additional Notes:

  • This class includes extensive hands-on instruction throughout the session and concludes with a shared meal at the end, such as minestrone soup or vegetable stir-fry, made with your freshly chopped ingredients prepared during class.
  • Please reach out to CourseHorse well in advance to discuss any dietary restrictions, food allergies, or special nutritional needs you may have.
  • Make sure to ring the outside buzzer when you arrive at our location, even if the front door is open, so we know you're here and can welcome and greet you promptly.
School Notes:

For NYC In-Person Classes:

You’ll receive a complete recipe packet and enjoy a full sit-down meal at the end of class with your classmates. Our classes are BYOB, and you are welcome to bring a bottle to enjoy at the sit-down meal (not including our baking or dessert classes).

Our classes are hands-on, coupled with demonstration-style teaching. Everyone is situated at their own cutting board/chef’s knife station around a large wooden work table that accommodates the whole class (10 people max). We work together as a group, with the chef at the head of the table.

We focus on knife skills, preparing ingredients for cooking, and we strive to find every opportunity to offer you a hands-on experience at the stove and at your station, all within the spatial parameters of a single stove/family-style kitchen. We ask for volunteers to assist in all cooking.

Refund Policy

For Public Classes:

We have a firm 3 business days cancellation policy (for credit only) to ensure that we have enough time to re-fill your seat with another student.

Please note: Boot Camps require 6 business days notice to be rescheduled.

While it is not in our nature to say no, we are simply not able to accommodate last-minute illnesses or work-related conflicts. However, you are always welcome to send someone in your place, because we understand that these things do happen. Classes are not refundable.

 For Culinary Boot Camps:

Because of the volume of Boot Camps we offer, we cannot offer make-up classes to anyone who misses a single class, no matter the reason, as it happens too often and we cannot handle that volume of make-ups.  Once you book your boot camp, make sure to mark (and prioritize) all the dates in your calendar.

Because we know how disappointing it is to miss a class, you are always welcome to send a friend in your place (just send us their name ahead of class), and perhaps insist that they cook you dinner as repayment.

In any event where a customer wants to cancel their enrollment and is eligible for a full refund, a 5% processing fee will be deducted from the refund amount.

 Thank you for understanding!

Wonderful class! Chef Sue is so knowledgeable and a really effective teacher. I am an absolute beginner and feel so much more confident now. I can’t wait both to put my new skills to use and to take another class there!

The class was so much fun and very educational! I liked how intimate it was so there was time to ask questions and get one on one time with the teacher. Would love to do another one of these classes!

    Good class. Lots of tips.
  • Knife Skills 101

I couldn't rate the class for a reason that I got sick on a day of class, and couldn't come but since their policy is 72 hours before cancelation for a refund, credit or changing the day of the class I couldn't do any of them. I am sure if I came to class, it would have been a fun experience, but I couldn't even change the class. In my personal opinion there has to be a rule that overwrites 72 hours rule which says if someone gets sick on the day of the class they have to at least be able to change for the later date of the class. I asked for the change, but didn't get one and then I got upset so I asked if they can't change for the later date at least give me a partial credit and I didn't get anything out of it. The only response was send someone else in my place, which sounds outrages. This class is for me and me alone, why would I send someone else in my place if I am the one who wants to learn so this proves that this class is not about teaching, but about money alone. I would never order this class again. I am not blaming CourseHorse it is a great platform and I had a lot of great classes before, but the school itself should change the law, because it is unpredictable and someone could get sick anytime, we can't predict 72 hours before if we get sick, and anything can happen. So the class gets one star from me, and this review. Thank you.

  • Knife Skills 101

This course exceeded my expectations. I thought I was just going to learn how to hold a knife correctly, but I also learned how to cook without a recipe and that I have been severely under-salting my foods (no wonder nobody wants to come over for dinner). I would recommend this course to any kitchen beginner and have thought about this class every time I've stepped into my kitchen since taking it. I'm more confident in the kitchen now and am excited to learn more!
